This illustrated volume presents the papers and discussions of the Fourth Three-day Working Meeting on olives and olive oil, organised by the ETBA Cultural Foundation in Kalamata, in May 1993, and sponsored by the company ELAIS. It contains the results of the study by thirty-two scientists, providing evidence on historical, economic, ethnological, technological and other details of the topic.
